Marinade
2tablespoonsblack pepper
2tablespoonssugar
1/2cupkosher salt
1/4cupchopped garlic
1/4cupliquid smoke
1/4cupsoy sauce
Instructions
Marinate the Ribeye
Combine all the marinade ingredients in a bowl.Place the ribeye in a large pan or dish.Cover one side of the ribeye with half of the marinade mixture, rubbing it all over.Turn the ribeye over and pour the remaining marinade on the other side, rubbing it in.Cover the pan and refrigerate overnight to allow the flavors to infuse.
Cooking
Preheat your oven to 450°F (230°C).Bake the ribeye at this temperature for about 30 minutes to sear the outside and create a nice crust.After 30 minutes, reduce the oven temperature to 250°F (120°C).Continue baking for approximately 2 hours until the ribeye reaches your desired level of doneness. This slow cooking ensures tenderness and juiciness.
Serving
Let the prime rib rest for a few minutes before slicing.Serve it with your favorite sides, such as mashed potatoes, roasted vegetables, or a fresh salad.

Room Temperature: Take the ribeye out of the refrigerator 2 hours before cooking to ensure even cooking.
USDA Choice vs. USDA Prime: The prime rib you’ll find in supermarkets is typically USDA Choice quality. If you prefer the higher fat marbling of USDA Prime, you’ll need to place a special order from your butcher.
